My quest for a great gluten-free cookie in Japan came up empty. So, I decided to bake a better one myself.
I'm Larry, a scientist by education, an engineer by trade, and baker for fun. I have a wheat allergy and have been avoiding gluten for 10 years, but enjoying the many gluten-free options in and around San Francisco. When I landed in Kumamoto from California. I didn't just want to make a gluten-free cookie; I wanted to create a sensationally delicious, soft, and chewy treat that was also vegan and free from all 28 major allergens.
It sounded impossible. How do you craft the perfect cookie without its three champions: flour, eggs, and butter?
With science and a whole lot of taste-testing! I engineered over 200 formulas, replacing wheat with a custom blend of rice and tapioca flours. Butter was swapped for luxurious coconut oil, and a secret combination of sake lees and shio koji brings a surprising depth of flavor.
