Our Transparency Report

1. Allergen & Cross-Contact Management

The Quick Summary: We have protocols for avoiding allergens in our kitchen, but we use a kitchen occasionally used to host catered events and do not yet laboratory batch-test our final dough. If you have severe, life-threatening allergies, please read our current limits below to decide if we are a safe choice for you right now.

 

Our Rigorous Kitchen Protocol

  • Dedicated Equipment: All of our raw ingredients are processed using our own strictly dedicated, allergen-free equipment, tools, and storage, but the oven and work surfaces are occasionally shared.
  • The Shared Kitchen Pre-Wash: We operate out of an inspected commercial kitchen licensed to us. The kitchen is occasionally used for catered events where allergens may be present.  After these events we execute a strict deep-cleaning protocol before we bake: hand-washing all surfaces, using our own separate cleaning supplies, and steam-cleaning the oven.
  • Personal Commitment: Our founders live with severe wheat and dairy allergies. We maintain these extreme sanitation standards because we eat these cookies ourselves.

 

2. Our Uncompromising Ingredient Standards

The Quick Summary:If an ingredient isn't clean, local, or organic, it doesn't make it into our dough. We strictly exclude the 28 major allergens tracked by the Japanese Ministry of Health, Labour, and Welfare.

  • Allergen-Free Inputs: 100% free from wheat, dairy, eggs, soy, nuts, and all other major Japanese-tracked allergens.
  • No Oats here: While pure oats are gluten-free, global commercial oats suffer from severe agricultural cross-contamination with wheat. Because of this risk, we have permanently banned oats from all Dream Cookies products (fully documented by the US National Institutes of Health (NIH) Report).
  • Local Sourcing: We use strictly certified non-gluten white and brown rice flours sourced from right here in Kyushu, naturally sweetened with rich brown sugar from Okinawa. Our ginger cookies use Kumamoto Ginger. 
  • Organic & Clean: We use pure organic virgin coconut oil, organic corn starch, and premium organic vegan chocolate made without chemical emulsifiers, fillers, or artificial stabilizers.

3. Raising the Bar: Our Safety Roadmap

The Quick Summary: We are completely committed to working hard to avoid allergens and constantly upgrading our food safety standards as we grow.

We are building this company to set a new standard for allergy-safe treats in Japan. Our next immediate milestone is transitioning to Independent Lab Batch Testing, where samples from every single production run will be verified clear of target allergens by a third-party laboratory before shipping.
